The Brasserie (opening June 2025) – offering modern British cuisine during lunch and dinner service for members and their guests.
THE ROLE
As the Restaurant General Manager, you will work an average of 48 hours per week, as per the rota, with any additional hours as required to fulfill the role. This will include early, late, and weekend shifts.
Reporting to the Director of Food & Beverage, you will play a pivotal role in mobilising the new restaurant, ensuring that all pre-opening processes are meticulously coordinated and executed. This includes working towards delivering the critical path, aligning resources and timelines, and overseeing key aspects of the setup, including staffing, training, and supply chain readiness. You will partner with the Executive Head Chef to lead the launch of the new brasserie, focusing on establishing high standards of consistency, quality, and service across all member dining experiences at The Hurlingham Club. Your leadership will be crucial in creating a seamless and memorable opening, setting a strong operational foundation for the restaurant’s success. A key aspect of this role is prioritising the member experience, actively engaging with feedback from members to continually enhance service quality and satisfaction.
The Restaurant General Manager will:
a) Oversee and direct seamless operations within The Brasserie, ensuring highly efficient, high-quality service.
b) Collaborate closely with the Head Chef to align on service standards and menu offerings.
c) Ensure compliance with all financial, health, and statutory requirements.
d) Lead, inspire, and set a strong example for the Brasserie team.
e) Recruit and maintain appropriate front-of-house staffing levels to support service excellence.
f) Develop and train all Brasserie staff to ensure skills growth and consistent quality.
g) Foster team development through mentorship and implement a clear succession strategy.
h) Ensure that all team members uphold high service and operational standards.
i) Strictly uphold health, safety, hygiene, risk assessment, COSHH, and manual handling standards as mandated by legislation, company policies, and external auditors.
