There are three kitchens at the Club, with an additional restaurant and concept scheduled to open in June 2025. Currently the Club operates the following:
Reporting to the Director of Food & Beverage, the Executive Head Chef will be responsible for overseeing all culinary operations at The Hurlingham Club.
A key focus will be leading the launch of the new Brasserie and establishing consistency across all dining areas, including members’ dining, events and all other Club outlets.
Reporting directly to the Executive Head Chef, there are two Head Chefs with a total brigade of 26 staff.
The Main Kitchen – prepares and cooks food for all member/non-member and corporate functions in the Events Suites. It also assists with the food preparation in other outlets, including the Pool Bar and BBQs between May and September. Within the Main Kitchen there is also a small pastry kitchen.
The Harness Room Kitchen – offering a relaxed menu exclusively for members and their guests, providing light breakfasts, lunches and a more formal evening offering.
The Polo Bar Kitchen – prepares a light menu and dinner seven days a week.
The Brasserie Kitchen (opening June 2025) – offering modern British cuisine during lunch and dinner service for members and their guests.
THE ROLE
As the Executive Head Chef you will work an average of 48 hours per week, as per the kitchen rota and any additional hours as required for the fulfilment of the role. This will include early late and weekend shifts.
Reporting to the Director of Food & Beverage, the Executive Head Chef will be responsible for overseeing all culinary operations at The Hurlingham Club. Serving as an essential leader within the Food & Beverage department, the Executive Head Chef is responsible for managing wage costs, optimising food margins, and carefully selecting suppliers to ensure effective menu engineering and robust cost control.
A key focus will be leading the launch of the new Brasserie and establishing consistency across all dining areas, including members’ dining, events and all other Club outlets.
The Executive Head Chef will:
a) Lead the culinary team to deliver consistently high-quality food production and presentation.
b) Ensure clear communication and set direction for daily culinary operations, holding regular meetings with senior chefs.
c) Innovate and create seasonal menus that reflect modern food trends while maintaining cost control.
d) Be responsible for embedding the use of the Club’s Stock Control System and ensuring all staff utilise the system appropriately.
e) Oversee costings for all menus and ensure collaboration with the Food & Beverage Commercial Team.
f) Maintain recipe uniformity across all kitchens.
g) Manage food costs and ensure budget adherence for culinary-related expenses.
h) Lead initiatives related to seasonality, traceability, and sustainability in menu development.
i) Train and develop kitchen staff to promote career growth and opportunities within the Club.
j) Ensure compliance with food hygiene and health and safety standards in all kitchens.

Candidates should proven experience leading a high-end, multi-outlet culinary operation and have strong leadership and management skills, with the ability to inspire and mentor chefs. You will have a passion for modern British cuisine and will have experience creating seasonal and innovative menus. The successful candidate will have experience managing food cost and payroll percentages in line with set budgets. Experience in launching new restaurant concepts is highly desirable.
